{one line a day} can't (zucchini) squash the love

Zucchini bread made from my Mom's 40+ year old recipe. Makes me miss my dad {in a good way}. . .he grew bushels of zucchini every year and my mom made the bread almost as fast as we could eat it!

{one line a day} fruit or vegetable?. . .

Rhubarb Muffins. . .thanks to my friend, Monica, I now have a recipe that is unbelievably easy and very popular in our house. And, yes, it's a vegetable muffin.

I guess it helps that we live right next door to the
I don't see myself making a rhubarb pie anytime soon, but rhubarb crisp? Yep, that's on the menu for tomorrow.

RHUBARB MUFFINS
1-1/4 c brown sugar
½ c oil
1 egg
2 tsp vanilla
1 c milk
1-1/2 c diced rhubarb
2-1/2 c flour
1 tsp baking soda
1 tsp baking powder
½ tsp salt
1 tsp margarine
1/3 c sugar
1 tsp cinnamon
Combine brown sugar, oil, egg, vanilla and milk. Stir in rhubarb. Add flour, soda, powder and salt and briefly just until blended. Spoon batter into greased muffin tin or baking cups, filling two-thirds full. Melt margarine and combine with sugar and cinnamon. Sprinkle over filled muffin cups. Bake at 400 degrees for 25 minutes.

{one line a day} Dinner, Dinner, Chicken. .Winner!


Chinese Orange Chicken

I love trying new recipes. This recipe is uber-easy and OMG! so good! And there's no MSG. . .yeah for me! Both girls took naps after doing their homework. I let them sleep right up to dinner and they walked up to the table sleepy-eyed to this meal set at their place. They ate quietly, nodding their heads up and down . . .even before I asked them "is it a 5?" We rate everything 1-5. If a new recipe doesn't rate a "5", then I don't make it again. I have too many untried recipes to make a "4" again. One of our favorite hometown Asian restaurants closed last year. They always served a green salad with the entree. Tonight it was the perfect side: cold and crisp! Yum.

{one line a day} haywee. . .

Hayden loves his big sis Haywee (Hailey). When a shirt we gave her for her birthday didn't fit, we bought two different sizes for her to try on. One fit perfectly, the other too small. Hayden asked if he could wear it. . .why not? They played all evening in matching garb. Cute!
